More like a stew, but so, so good! My crockpot was full to the brim so I wasn't able to add broth to make it more like soup, but that's OK. I threw in a bit of pasta the second night, which turned it into a hearty one-dish meal. In April 2020 you have to use whatever ingredients you have available, so I used regular sausage instead of Italian, and made the measures of seasoning generous. This recipe is a keeper -- thanks for sharing!
I have made this 3 times now. It gets better after sitting in the fridge overnight! It is absolutely delicious as is! I have only doubled the garlic (for personal preference only, we are garlic fanatics and do that to every recipe). I suggest quartering thick slices of zucchini, so they are perfect shape for spooning. You must make this soup!
This is such a lovely hearty soup. We took it to the family reunion..it was a real hit...everyone wanted the recipe. The only thing I have changed is the amount of salt. Cut in 1/2.
Spoiler alert to those who don't like people who make changes to recipes and then rate them. I used hot Italian sausage instead of sweet, I did not add the sugar and based on other reviews, I added only one teaspoon of salt. I'm guessing the sugar is to cut the tomato acid, but my husband is a diabetic and doesn't need any added sugar. Other than that, I followed the recipe. We loved it. A little spicy for my husband so will probably use sweet sausage next time. Everyone else I let try it loved it. (Daughter, granddaughter (she had two bowls of it!!)).
